FLORENCIO RODRIGUEZ

Florencio Rodríguez, owner and creator of the recipes at his renowned restaurant, carries a deep culinary heritage rooted in his hometown of Guanajuato, Mexico. With a love for cooking passed down through generations, Florencio masterfully blends family traditions with his passion for innovation, achieving the perfect balance between classic and contemporary.

As the visionary behind the restaurant, Florencio is dedicated to crafting authentic menus that celebrate the flavors of his childhood, the cultural richness of Guanajuato, and the stories that form part of his legacy. In addition to designing unique recipes, he ensures the highest quality of ingredients, manages costs, and meticulously oversees every detail to ensure each dish reflects the soul of his heritage.

JESUS ROMAN

Jesús Román, executive chef of the Don Julio Group, is a key culinary leader within the group. With an unwavering passion for Mexican cuisine, Román oversees culinary operations, ensuring excellence and authenticity in every dish.

Román is responsible for maintaining the highest quality standards through ingredient selection, staff training, and the implementation of efficient processes. Additionally, his innovative talent shines in the creation of new dishes that blend tradition and modernity, enriching the menus of Don Julio Mexican Kitchen and Don Julio Mexican Grill.

Under his leadership, the Don Julio Group’s restaurants celebrate the roots of Mexican cuisine while evolving to delight the most discerning palates. Jesús Román is an ambassador of authentic Mexican cuisine and a source of inspiration for his team.

SEBASTIAN PEREZ

Sebastián Pérez, executive chef from Bogotá, Colombia, brings an exceptional blend of expertise and passion to his role. Certified as both an Executive Chef and Pastry Chef, Sebastián also holds specialties in Molecular Cuisine, chocolate arts and bread making.

As an executive chef, Sebastián’s responsibilities include designing innovative menus, crafting plating designs, ensuring ingredient quality, managing cost control, standardizing recipes, and overseeing production and inventory control. His meticulous approach guarantees excellence and consistency in every aspect of the culinary process.

Sebastián’s vision for his menus centers on evoking happiness through memories, comfort, flavor, and simplicity. With each dish, he aims to create a culinary experience that resonates deeply with diners, celebrating both tradition and innovation.
